Hi, I’m Laura!

Aquafaba is my plant-based cottage bakery licensed in Oak Park, Illinois. I am passionate about creating indulgent foods that are entirely dairy-free and egg-free, without the use of any animal products or by-products.

While I’ve always loved creating (and eating) delicious food, it was my desire to create healthier treats for my family that led me to start experimenting more with entirely plant-based baking. In May 2025, I completed Rouxbe’s Essential Vegan Desserts course, an intensive program covering all aspects of vegan desserts and baking.

Where possible, I like to sneak in extra nutrients by using alternatives to white flour and sugar, or by adding fruits, veggies, nuts, or seeds - but only if I can maintain indulgent flavors and textures.

I personally choose to follow a vegan diet; however, my goal is to create delicious food that appeals to anyone – whether you’re vegan, veg-curious, or simply craving something delicious with a little extra goodness inside for your and your family.
