Hi, I’m Laura!
Aquafaba is my plant-based cottage bakery licensed in Oak Park, Illinois. I am passionate about creating indulgent foods that are entirely dairy-free and egg-free, without the use of any animal products or by-products.
While I’ve always loved creating (and eating) delicious food, it was my desire to create healthier treats for my family that led me to start experimenting more with entirely plant-based baking. In May 2025, I completed an intensive vegan desserts program, and along the way discovered a renewed passion for being in the kitchen.
With all of my baked goods, I strive to strike a balance between healthy(er) and indulgent. That includes prioritizing whole grains and stone-milled flours, and replacing some or all sugar in a recipe with alternatives like maple syrup or fruit puree - as long as I can do it without sacrificing the flavor and texture.
I personally choose to follow a vegan diet; however, my goal is to create delicious food that appeals to anyone – whether you’re vegan, veg-curious, or simply craving something delicious with a little extra goodness inside for you and your family.
